Beans have been a staple food in cuisine throughout the world for thousands of years. Archaeologists have discovered beans in ancient Egyptian tombs and in ruins of Native American habitats in the Southwestern United States. Well-known as a powerhouse of nutrition, beans can also be a foundation for imaginative dishes. Abundant with soluble fiber, they combine well with grains. They are virtually fat-free, have no cholesterol and are a good source of vitamins. The mild flavor makes them perfect partners with sandwiches and main dishes. Favored in Latin American and Caribbean cuisine. Vigorous, dwarf, bush-type plants bear heavy yields of small black beans, 7-8 per pod. The young pods are crisp and tender and may be used as snap beans if picked early. Grows well in all regions except extreme North. This old heirloom variety was introduced in the late 1700's, and has beautiful, jet black seeds. Bush variety bean are heat resistant, a good disease tolerance.

The black turtle bean is a small black bean. They turn from black to a dark brown color when cooked. This is a common bean in South America and is well known bean in China where it is fermented for many uses.
