SPROUTING SEEDS: Sprouting seeds is an inexpensive and enjoyable way to add nutrition to your meals. The most common way to enjoy sprouts is on sandwiches or in salads. In the dead of winter, sprouts offer a means of producing one's own fresh greens and vegetables, and provide healthful and tasty foodstuffs at a time when vitamin content is lowest in commercial foods.

Alfalfa Sprouts: Crops in 2-4 days. These extremely nutritious, vitamin-rich, sweet-tasting sprouts are easy to sprout in a warm place. An airing cupboard is ideal if white sprouts are required, or for green sprouts, place in the kitchen out of direct sunlight. Each placement will give a slightly different taste and texture. These fast-growing sprouts may be sown all year round and are ready to eat in just 2-6 days. They may be grown in a special sprouting kit or a simple jam jar. Sowing Instructions for Growing Indoors: Put 2 tablespoons (50ml) of seed in a jam jar. Cover seeds with about 1 cup (250ml) of water. Cover the jar with a piece of muslin and secure with a rubber band. Soak seeds over night. The seeds will swell considerably. Drain water through the muslin cloth, then rinse the seeds in fresh water. Repeat this process, then drain well and place jar on its side. Rinse seeds at least twice daily through the muslin cloth until sprouts are ready to eat. This is essential to avoid fermenting, moldy seedlings. When ready to eat, rinse and use straight from the jar. The sprouted seeds will keep in an unsealed polythene bag in the fridge for 3 or 4 days. Rinse them regularly.
