Also called Pak Choi, this leafy green is said to have been cultivated in Asia since the 5th century. A miniature variety, Toy Choy grows just 5" tall and is ready to harvest in as few as 30 days. Its size makes it perfect for cooking intact as a single serving vegetable. Tolerates warm weather better than full size types, but also withstands cold down to 15° F.
