Pea shoots can be grown indoors in shallow flats under lights or in a sunny window. Outdoors, Peas for Shoots are best grown in the cool temperatures of spring and fall, but will grow any time soil temperatures are between 45°F and 75°F. Harvest when plants have a couple sets of leaves, usually when shoots are only 3” to 4” tall. Pea shoots are extremely versatile. Add to salads, sandwiches, soups and stir-fries, use them for a pizza topping, or serve as an edible garnish. This packet yields approximately 12 cups of pea shoots.
