Tender perennial. Mexican tarragon is a type of marigold that produces leaves with a delicious tarragon-anise flavor. It can be used as a substitute for French tarragon and is easier to grow. The leaves have a stronger flavor so less is needed to flavor a dish. Popular in Mexican and Southwestern cuisine. Flowers are a colorful addition to salads.
