Product Description

Georgia Collards. Brassica oleracea var. viridis. Hardy Biennial. Rich in flavor, texture, and nutrition, collard greens are essential to traditional southern cooking, lending flavorful heft to stew, minestrone, and stuffing. Enjoy steamed, braised, or stir-fried. The mild cabbage-like flavor of the tender leaves improves with a light frost. Plant in spring and again in late summer for a fall to winter harvest. Traditionally paired with ham hocks or other pork dishes. Very tolerant of temperature extremes, bolt resistant and can over-winter in the mid and deep South. Part to Full Sun. Moderate Water. Mature Size: 24"–36" tall, 18" wide Harvest whole plants when they are 6-8 inches tall. If you do not want the whole plant, pick the bottom leaves as you need them and the inner buds will keep producing. You can also harvest whole plants by cutting off just below the crown. If grown in the fall, wait until after a light frost as the frost sweetens the flavor. Wrap the leaves in a clean, wet tea towel, or damp paper towel and place in a perforated plastic bag and refrigerate. Collards are best when steamed, sautéed, or boiled.
  • Fall frosts make them sweeter, and they may overwinter, as they can survive temperatures down to 20°F
  • Hardy Biennial, excellent container variety
  • Days to Maturity: 50-80
  • Heat Tolerant
  • Immediate shipping in a 3" pot
